Christmas Cookies

Jose Cuervo Christmas Cookies

1 cup of water

1 tsp baking soda

1 cup of sugar

1 tsp salt

1 cup of brown sugar

4 large eggs

1 cup nuts

2 cups of dried fruit

1 bottle Jose Cuervo Tequila

Sample the Cuervo to check quality. Take a large bowl,

check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink.

Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl.

Add one peastoon of sugar. Beat again. At this point it's best to make sure the Cuervo is still ok, try another cup just in case.

Turn off the mixerer thingy.

Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.

Pick the frigging fruit off the floor.

Mix on the turner.

If the fried druit gets stuck in the beaters just pry it loose with a drewscriver.

Sample the Cuervo to check for tonsisticity.

Next, sift two cups of salt, or something. Who geeves a sheet.

Check the Jose Cuervo.

Now shift the lemon juice and strain your nuts.

Add one table.

Add a spoon of sugar, or somefink. Whatever you can find.

Greash the oven..

Turn the cake tin 360 degrees and try not to fall over.

Don't forget to beat off the turner.

Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the wishdasher.

Cherry Mistmas !

Okay, okay . . . it's still an oldie but goodie!!

Snickerdoodles. A million holiday memories emulsified into into a single cookie, soft, chewy inside, crackly outside, the scent of vanilla, butter (dont you dare use a substitute) sugar...even better if you use raw sugar.. and cinnamon, oh.. *meeeellllllt* ohhh to wake to the smell of fresh baked snickerdoodle cookies the morning of christmas eve... I did not grow up with these cookies... but if cinnamon was a part of your childhood, you will be a kid again to these little lumps of pure joy... they are basically sugar cookies, rolled in cinnamon sugar...some recipes call for mixing in the cinnamon, ignore them, just roll them in a bowl of the stuff...

Anyway, my moment of cinnorgasmic bliss aside.. i reccomend mincemeat cookies...i know i know.. only clasic mincemeat has actual meat in it and you cant buy it anymore, youd have to make it. mincemeat is raisins, brown sugar, a few other forms of dried fruit, a bit of molasses, generally..depending on what type you use it might have some animal lard in it but thats the closest it will come to being meat.

Ahem. Mincemeat cookies. On the baking isle, you will see a package that reads "nonesuch"...by eagle brand i believe. there are 3 kinds, two come in jars, one contains rum, one does not. The third is in a box, The box will have a recipe for award winning mincemeat cookies...follow it, dont over mix, always preheat oven.. and..if you have it, or can find it, i would suggest using vanilla rum...ive been working on mine all year, basically home made vanilla extract using rum as the alcohol base instead of cheap vodka, scrape, then shove beans, seeds and all, into a bottle of rum and stick in a closet for a year, no straining...just shake it up every once in a while...

I defy ANY of you to understand a word i just said because i dont think i did...

Can't help you out with the "cinnamon" part, but I made these for Thanksgiving and everyone INHALED them. They're not very fancy, but they're delicious. The kids and teens especially loved them.

Peanut Butter Cup Cookies

Ingredients

1 3/4 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon baking soda

1/2 cup butter, softened

1/2 cup white sugar

1/2 cup peanut butter

1/2 cup packed brown sugar

1 egg, beaten

1 teaspoon vanilla extract

2 tablespoons milk

40 miniature chocolate covered peanut butter cups, unwrapped

Directions

Preheat oven to 375 degrees F (190 degrees C).

Sift together the flour, salt and baking soda; set aside.

Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.

Shape into 40 balls and place each into an ungreased mini muffin pan.

Bake at 375 degrees for about 9 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Last night, the roommate and I were in the kitchen until midnight making traditional Lithuanian Grybai cookies (mushroom cookies). We had to bribe my boyfriend to eat one because he thought we used mushrooms to make them.

I'm sorry, but.... EWWWWW!!

(I know they're not really made from mushrooms, but the fact is they certainly LOOK like mushrooms - lol).

Definitely not meringue...they are gingerbread cardamom cookies. They have a consistency just like gingerbread. I, too, was skeptical at first when the roommate announced that we were making mushroom cookies. She explained that just as we enjoy gingerbread men cookies, they (Poland/Lithuania) enjoy gingerbread mushrooms!

She can make these cookies without using a recipe, just like her mom taught her, but I found this one that she said is near exact to how she makes them:

Lithuanian Grybai

1/2 c. honey

1/4 sugar

2 T. firmly packed dark brown sugar

2 T. butter

1 egg

1 1/2 t. ground cardamom

1 1/2 t. .ground cinnamon

1 1/2 t. ground ginger

1 1/2 t. ground cloves

1 1/2 t. ground nutmeg

1 1/2 t. fresh grated lemon rind

1 t. fresh grated orange rind

2 3/4 c. sifted all-purpose flour

3/4 t. baking soda

1/4 t. salt

2 T. cream or milk

For decorating:

2 c. powdered sugar

3 T. water

poppy seeds

Preheat oven to 350. Heat the honey in the microwave using a glass measuring cup, then stir in the sugars, butter, egg, spices, and grated rinds.

Sift the flour, baking soda, and salt into a medium-size mixing bowl. Add the honey mixture alternately with the cream or milk, stirring with a wooden spoon until blended. Turn the dough out onto a floured board or pastry cloth. Knead the dough, adding flour to the board as often as necessary to prevent sticking, for 5 or 6 minutes, until the dough is easy to handle and not at all sticky. It should be firm enough to hold the impression of your finger. Let the dough rest at room temperature for 20 minutes.

Divide the dough into four equal parts. Make mushroom “stems†from one-quarter of the dough by shaping into four rolls, each about 12 inches long and about 3/8 inch in diameter. Cut into 1-inch lengths. Shape one end of each piece into a point with your fingers. Place the stems on their sides 1 1/2 inches apart on an ungreased baking sheet. Bake at 350 for about 7 minutes until firm. Cool on wire racks.

Make “caps†by shaping remaining dough into 3/4-inch balls. Hold a ball in the palm of your hand and make an indentation about 1/2 inch deep in each with the handle of a wooden spoon, twisting it in and out. This is where the stem will later be inserted. Place the caps, indented side down, on an ungreased baking sheet, spacing them about 1 1/2 inches apart. Bake for about 12 minutes until the cookies are lightly browned on the bottom. Cool on wire racks.

Press the powdered sugar through a coarse kitchen strainer to remove any lumps. Blend it with 1 T. of the water until smooth. Add the remaining 2 T. water, 1 t. at a time, beating well after each addition.

Enlarge indentations in caps if necessary with a small pointed knife. Dip one end of each stem in frosting and insert in caps. Dry the cookies, cap side down. Dip the top of each cap in frosting, allowing any excess to drip back into the bowl. While still wet, sprinkle the frosted caps with poppy seeds.

Place the cookies, stems down, into a cooling rack where they may dry undisturbed for several hours or overnight. Pack in airtight containers and allow the flavor to mellow for three or four days before serving.

Makes about 4 dozen.
