So we have gotten a few settlement checks from CA and will be getting a few more and possibly a PI check for an auto accident.

Is this going to be a problem if we get this within a few months of getting a house? I'm wondering as far as bank statements go and stuff.

Do I need to make copies of these checks so that way the mortgage person will have these?

Since you are thinking ahead, I'd make copies just to be safe. Once they sit in your account more than 60 days, they won't ask, but you never know, so it doesn't hurt to be prepared.
