It snowed. I'll have to be on the road earrrrly tomorrow to avoid the mess. I'm not pleased about this.

I don't know how you people live like that. My company keeps trying to get me to take a job in Chicago, and I can't.

I would never live in Chicago, but it certainly isn't because of the snow.

Now, I only wish we could get some snow....sigh.

Trevor!!! Please respond ASAP... I REALLY, REALLY MISS YOU!

Your friend,

Kat

Macadamia Nut Pie

Serves 8

There is nothing like the taste of a pie shell filled to the brim with macadamia nuts, baked until golden and then chilled, cut and served with whipped cream. No matter what you had for dinner; you can't turn this one down.

Ingredients:

3 eggs

2/3 cup granulated sugar

1-cup light corn syrup

1-1/2 to 2 cups chopped macadamia nuts

2 tablespoons melted butter

I teaspoon vanilla

1 unbaked 9-inch pie shell

Directions:

Preheat oven at 325 degrees F

Beat eggs with sugar and corn syrup and stir in the macadamia nuts. Add butter and vanilla and blend well.

Pour mixture into pie shell. Bake for 50 minutes or until the crust is golden and the center is somewhat set. Test this by shaking the pie gently. Let cool and chill.
