I am sure those are amortization schedules for each specific loan funded and probably contain personal information associating said schedule with specific borrowers and their data.  Even if the schedule only included a name, you would still have loan date, amount, APR, term etc.

As long as there is almost no accountability (apologize, offer free credit monitoring, repeat) it'll keep happening.

People have been getting that info legally from public records since direct mail was invented.  Your mortgage is a recorded instrument.
