Dinner tonight was an ice cream scoop of lukewarm mashed potatoes, a New York strip (USDA Select?) and a pile of room-temperature mixed vegetables.

The strip steak and something called "Hammer Time" were sold out.

At least it was open.

From what I can tell so far, killing time between Denali and Whittier.

Also, there was a chance of seeing this.

Our hotel offers a wake up call if the Northern Lights are visible, and at 1:25 a.m. the call came in.

TAD has a better camera but he's still sleeping, so here are a couple of shots from my phone.

Spicy Chongqing Chicken.

My go to every time I'm in the Raleigh area. I sent this pic to a place local to me in Charlotte. They now make it for me upon request. They are debating about making it available to the unwashed masses. It's way to spicy for most of their regulars. Speaking of regulars. If you have regularity issues, this dish will help push things through with ease, except for the burn. if ones constitution is not used to this level of heat.

Looks very similar to a dish that a local dim sum place makes here, however the protein is alligator.  Really good, and while I find it spicy it is not overly so in my opinion.

I have a couple of Wagyu brisket burgers I picked up at Siesel's ready to toss on the grill, and I'm bracing myself for the disappointment.

I'm sure they'll be good, but I've never had Wagyu [anything] that was noticeably better than the other beef we normally eat.

The burger is a bit juicier than the ground beef I normally use, but if I wasn't aware of the specific reason for the difference I would have assumed that this was 70/30 rather than the 80/20 I normally buy.

Flew a morning DFW-RNO segment on AA Thursday morning.  It's been a long time since I've entirely turned up my nose to an AA FC meal.  I'm almost always VERY satisfied with the domestic meal selections.  This was an exception ...

The first food selection was a salmon/egg protein breakfast (a modest salmon fillet w/ a hard boiled egg).  In the context of a 3+ hr flight, I consider consuming something like this to be "rolling the dice".  Even if fresh, I'm not confident that my stomach and gut are going to be entirely copacetic digesting these foods.  Frankly, both are far too pungent for the circumstances and if I should come across a bite that was just a tad "off", I likely might make use of the seat back "barf bag" for the 2nd time in my life.  (1st time was about 20 years ago on a 5 hour PHL-LAS segment when a harsh migraine set in just after take off.)

The less said about the back-up selection the better:  egg salad sandwich.  (Please bring back the yogurt and granola !!)

You probably could have doused that with Scotch and walked away unscathed.

I was on a Hawaiian flight in F several years ago where there was only one breakfast choice remaining by the time they got to my row... and the "choice" was corn flakes.

But all of the milk on board was spoiled, so I decided to pour Bailey's Irish Cream over it, which was pretty good.  I also briefly considered Kahlua.

I made a coconut cream pie today.

I was in a rush to finish the filling so I wouldn't be late for a meeting, and I forgot to stir in 2 tablespoons of butter and 2 teaspoons of vanilla at the very end.

I definitely missed these two ingredients but the pie was still tasty.

And then tonight I made this, which wasn't awful, but the result wasn't worth the extra effort compared to more basic ways to cook a portobello.  I'm glad I also grilled some chicken.

I'm ambivalent, but you-know-who loves them.

This is my favorite way to eat them.

Years ago I had the most delicious portabello sandwich for lunch at Pampas Argentine Grill next to Montgomery Field. Not sure if they're still around but this recipe you posted looks great. I may try this at Thanksgiving.
