The juice ('gravy' as locals will refer to it) enhances the flavor of the bread. It is as integral to the Italian beef sandwich as the melted butter is on a hot lobster roll... Oh I've been around those who like their Portillo's with "some gravy" and "dunked in gravy" - the "dunked in gravy" is the one that looks like the hot dog buns at Coney Island on July 4th. Konrad2012 Posted August 20, 2018 Share Posted August 20, 2018 (edited) I've been using my Bradley Digital Electric Smoker® every weekend. Some of the stuff has been outstanding. Yesterday I brined split bone-in chicken breasts for an hour, rinsed, dried, applied a dry rub I made, let come to room temperature. Smoked with apple wood to 162°. Tented with foil and let rest for 20 minutes. They were as good as any smoked chicken I've ever had. So far I've done: coffee brined tri tip, spare ribs, baby back ribs, pork chops, rib eyes, mini meat loaf rolls, corn on the cob, meatballs (and the chicken). Next time I do chicken I'm going to do like 3 times more. Shred half the leftovers, cube the other half, vacuum seal and freeze. The tri tip and the meatloaf made for great leftovers as well. Remembering this thread and Portillo's I went and got an Italian Beef sandwich. Gravy is standard - Dry, Extra or Dunked. Peppers - Sweet or Hot - are extras. Granted I'm in California and I cannot recall if peppers were extra in Chicago. I'm wondering if you even ate the same sandwich, or if it had been focused-grouped and heavily bastardized to optimize ingredients and preparation process for mass production before Portillo's expanded. For example, the pizza at the franchised Uno's locations is horrendous, but at the original Uno's it's fantastic. cv91915 Posted September 9, 2018 Author Share Posted September 9, 2018 Today was a terrible food day in Chicago, which I didn't know was possible. This morning we drove all the way out to Wheaton and visited Catigny Park, which was interesting and well worth the time. But we ate in the on-site restaurant. Our "server" didn't know what club soda is. Nor did her manager. On the way back into the city we stopped at Oakbrook Center, for reasons that neither of us could explain to the other later. We stopped for happy hour(?) at Wildfire. I had a cup of French onion soup and something else. Back in the city our crowning culinary achievement of the day was libations and popcorn at Replay. We had a great time playing Donkey Kong and Ms. Pac-Man, but sadly they didn't have Galaga. After arriving back at my hotel a few minutes ago I was going to order room service, but I don't feel like waiting for it to arrive, so I guess I'll just go to sleep trusting that my friends will pick something fabulous for brunch tomorrow.
