I have 3 that I have defaulted on; 2 are older, one is more recent. The two older ones say "Claim filed with government" - what does this mean? Sounds terrifying. The more recent one simply still says "Open"

How do I handle these, and how does the way I handle them differ between the older ones and the more recent ones?

This means you defaulted on a federal loan. Your guarantor has paid off salliemae and you now owe them.

The recent one...are you paying on it? Is it federal or private?
